Chocolate is by far one of my favourite indulgences. Unfortunately, it was often followed by a feeling of guilt after so many years of being told it was “unhealthy”, and in many forms it is. However, times have changed and there are so many healthy chocolate alternatives out there. I enjoy my daily dose of chocolate and don’t feel any guilt afterwards as I know it is healthy and nourishing to my body. What type of chocolate do I consume? Raw cacao! Raw cacao is packed with antioxidents and magnesium. It is one of nature’s “superfoods”, and it tastes divine! These are two of my favourite chocolate recipes, I hope you enjoy!
Healthy Chocolate Peanut Butter Fudge by creatingnaturally.com
- 1/2 cup coconut oil (slightly melted over a double burner, but not hot)
- 1/2 cup good quality cacao powder
- 1/2 cup natural smooth peanut butter
- 1/4 cup mild raw honey
- 1/2 tsp pure vanilla extract
Prepare a muffin pan with 10 muffin liners.
Put all ingredients in the a bowl and whisk together until no lumps are left. It will be very liquid-y and easy to pour.
Pour the liquid fudge into the prepared muffin liners dividing evenly between the ten of them. There will be about a half inch of fudge in each muffin liner.
Place the muffin pan in the refrigerator for 30 minutes or until the fudge has hardened. (Sometimes I use the freezer and it only takes about 10 minutes)
Remove the muffin liners from the pan and enjoy your delicious, healthy fudge! Store in the refrigerator.
Raw Chocolate Bars
Makes 1/2 c. raw chocolate
1/2 c. coconut oil, melted
6 heaping Tbs of raw cacao powder
4 Tbs of maple syrup
pinch of salt
Mix all of the ingredients into a bowl.
Pour into a chocolate mold.
Freeze for 15 minutes or until set. Store raw chocolate in fridge until ready to use.
